There is nothing quite like a warm bowl of beef stroganoff after a long day. It is one of those meals that feels fancy enough for guests but is simple enough to put together on a busy weeknight.

My secret for the best texture is to slice your steak against the grain so every bite is melt in your mouth tender. Don't rush the browning step, as that deep color on the mushrooms and beef provides most of the flavor for the sauce.

Ingredients

  • 1 pound sirloin steak, thinly sliced
  • 8 ounces egg noodles
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 pound cremini mushrooms, sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper to taste
  • Fresh parsley for garnish

7Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the egg noodles according to the package directions. Drain and set aside.

  2. 2

Heat the olive oil in a large skillet over medium high heat. Season the steak strips with salt and pepper, then sear them quickly until browned. Remove the beef from the pan and set it on a plate.

  3. 3

In the same skillet, melt the butter and add the mushrooms and onions. Cook them until the mushrooms are golden brown and the onions are soft.

  4. 4

Stir in the garlic and cook for one minute until fragrant. Sprinkle the flour over the vegetables and stir well to coat.

  5. 5

Slowly pour in the beef broth and the Worcestershire sauce while stirring constantly to prevent lumps. Let the sauce simmer for a few minutes until it thickens.

  6. 6

Turn the heat down to low. Stir in the sour cream until smooth and return the cooked steak to the skillet. Heat everything through gently without letting the sauce boil.

  7. 7

Serve the creamy beef mixture over the cooked egg noodles and top with a little fresh parsley.

Tips

Leftovers store perfectly in an airtight container in the fridge for up to three days. If you find the sauce has thickened too much, just add a splash of beef broth or water when reheating. Serve this with a side of steamed green beans or a simple garden salad.
