There is nothing quite like coming home to a house that smells amazing because dinner is already finished. This sesame ginger beef is one of my absolute favorite slow cooker recipes because the meat turns out incredibly tender and the sauce is packed with classic savory flavors.

It is perfect for busy weeknights when you want a hearty meal without the hassle of standing over a stove. You can easily add your favorite vegetables like broccoli or snap peas in the final hour of cooking to turn it into a complete, healthy dinner.

Ingredients

  • 2 3 pounds chuck roast, cut into 1 2 inch cubes
  • 1/2 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/3 cup packed light brown sugar
  • 1/4 cup sliced green onions, plus more for garnish
  • 3 tablespoons minced fresh ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Sesame seeds for garnish

6Instructions

  1. 1

Place the cubed chuck roast into the bowl of your slow cooker.

  2. 2

In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, green onions, fresh ginger, garlic, rice vinegar, and sesame oil.

  3. 3

Pour the sauce mixture over the beef in the slow cooker.

  4. 4

Cover and cook on LOW for 8 to 9 hours or on HIGH for 4 to 5 hours until the beef is very tender.

  5. 5

During the last 30 to 45 minutes of cooking, stir in the cornstarch slurry, cover the lid again, and let it cook until the sauce thickens nicely.

  6. 6

Serve the beef over warm steamed rice and sprinkle with extra green onions and sesame seeds.

Tips

Store any leftovers in an airtight container in the refrigerator for up to 4 days. When serving, this dish pairs beautifully with a side of steamed white rice or stir fried snap peas and carrots to soak up all that extra sauce.
