There is nothing quite like a big bowl of beef and noodles when you need something warm and satisfying. It is the kind of recipe that makes the whole house smell amazing while the beef slow cooks until it falls apart into tender shreds.

I love this dish because it is gentle on the budget but tastes like a special occasion meal. Make sure to use a good quality egg noodle, as they hold up beautifully in the savory broth.

Ingredients

  • 2 pounds chuck roast, cut into chunks
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 12 ounces wide egg noodles
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

8Instructions

  1. 1

Heat the oil in a large pot or Dutch oven over medium high heat.

  2. 2

Sear the beef chunks on all sides until browned and remove them from the pot.

  3. 3

Add the onion to the pot and cook until soft, then stir in the garlic.

  4. 4

Return the beef to the pot and pour in the beef broth and dried thyme.

  5. 5

Bring the mixture to a simmer, then cover and cook on low heat for about 2 hours until the beef is very tender.

  6. 6

Remove the beef and shred it with two forks before returning it to the broth.

  7. 7

Add the egg noodles to the pot and simmer for about 8 to 10 minutes until they are cooked through.

  8. 8

Season with salt and pepper to taste and serve with a sprinkle of fresh parsley.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. The noodles will soak up the broth as they sit, so you may want to add an extra splash of beef broth when reheating. This dish freezes well if you store it without the noodles and add fresh ones upon reheating.
