Sourdough sausage gravy has become a weekend staple at our house. My family loves it because the tang from the sourdough discard cuts through the richness of the sausage and creates a velvety texture that is hard to beat. It is a hearty meal that feels like a big hug on a plate.

The best part is that you can make this entire gravy in just one skillet while your biscuits bake. It is a fantastic way to use up your extra starter, and I promise that once you try this version, you will never want to go back to making gravy with plain flour again.

Ingredients

  • 1 pound ground breakfast sausage
  • 1/2 cup sourdough discard
  • 3 cups whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Freshly cracked black pepper to taste
  • Salt to taste
  • Freshly baked sourdough biscuits for serving

8Instructions

  1. 1

Prepare your sourdough biscuits according to your favorite recipe and keep them warm.

  2. 2

Place a large skillet over medium heat and add the breakfast sausage. Cook while breaking it apart with a spatula until it is browned and cooked through.

  3. 3

In a separate bowl, whisk the sourdough discard with 1 cup of the milk until the mixture is completely smooth and free of lumps.

  4. 4

Pour the discard and milk mixture into the skillet with the cooked sausage. Add the remaining 2 cups of milk and stir well to combine.

  5. 5

Cook the gravy over medium heat while stirring constantly. Scrape the bottom of the pan to pick up any flavorful browned bits.

  6. 6

Once the gravy starts to bubble and thicken, stir in the garlic powder, dried thyme, and plenty of black pepper.

  7. 7

Taste the gravy and add salt if needed, keeping in mind that the sausage is often salty already.

  8. 8

Remove the pan from the heat once the gravy reaches your preferred thickness, then ladle it generously over split biscuits.

Tips

Store any leftover gravy and biscuits in separate airtight containers in the fridge so the biscuits do not get soggy. To reheat, simply warm the gravy on the stove and stir in a small splash of milk if it has become too thick.
