There is something truly special about a potato that is soft on the inside and crispy on the outside. These smashed potatoes are a staple in my kitchen because they go with almost any main dish you can think of. They are simple to prepare and disappear from the table faster than you can serve them.

My top tip for the best texture is to make sure your potatoes are completely dry after boiling them. Excess moisture keeps them from getting that golden crunch we all love. Just let them steam in the colander for a few minutes before smashing.

Ingredients

  • 2 pounds baby gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or parsley
  • Optional: creamy feta sauce for dipping

8Instructions

  1. 1

Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.

  2. 2

Bring the water to a boil and cook the potatoes for 15 to 20 minutes until they are fork tender.

  3. 3

Drain the potatoes and let them sit in the colander for 5 minutes so they dry out.

  4. 4

Preheat your oven to 425 degrees Fahrenheit and grease a large baking sheet.

  5. 5

Place the potatoes on the sheet and use the bottom of a glass to gently smash each one until it is about half an inch thick.

  6. 6

Drizzle the olive oil over the smashed potatoes and sprinkle with salt, pepper, garlic powder, and herbs.

  7. 7

Bake for 20 to 25 minutes until the edges are golden and crispy.

  8. 8

Serve warm with your favorite dipping sauce.

Tips

These potatoes are best eaten fresh from the oven to keep that signature crunch. If you have leftovers, store them in an airtight container in the fridge and reheat them in a hot oven or air fryer to bring back the crispiness.
