Creamy Crockpot Broccoli Cheddar Chicken and Rice
This comforting meal brings together tender chicken, fresh broccoli, and melty cheese for an easy dinner.
enzo81.xyzThere is nothing quite like coming home to a warm, cheesy meal after a long day. This broccoli cheddar chicken and rice dish is a favorite in my house because it is so simple to prepare in the slow cooker and the leftovers taste great the next day.
My best tip is to stir in the fresh broccoli during the last hour of cooking. This keeps the florets bright green and prevents them from getting too mushy while the chicken finishes cooking.
Ingredients
- 1.5 pounds boneless skinless chicken breasts
- 1 cup long grain white rice, uncooked
- 2.5 cups chicken broth
- 1 can condensed cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 cups fresh broccoli florets
- 2 cups shredded white cheddar cheese
- Salt and black pepper to taste
9Instructions
- 1
Place the chicken breasts at the bottom of your slow cooker.
- 2
Add the uncooked rice, chicken broth, cream of chicken soup, garlic powder, and onion powder to the pot.
- 3
Stir everything together until the ingredients are well combined, making sure the rice is fully submerged in the liquid.
- 4
Cover and cook on low heat for about 3 to 4 hours.
- 5
Add the broccoli florets to the slow cooker and stir them into the mixture.
- 6
Cover and cook for another 30 to 45 minutes until the broccoli is tender and the rice is cooked through.
- 7
Remove the chicken, shred it with two forks, and return it to the pot.
- 8
Stir in the shredded white cheddar cheese until it is melted and creamy.
- 9
Season with salt and pepper to your liking before serving.
Tips
Store any leftovers in an airtight container in the fridge for up to three days. If the rice absorbs too much liquid while storing, add a splash of chicken broth when reheating on the stove.
