There is nothing quite like a warm bowl of creamy chicken noodle soup when the weather turns chilly. It is one of my favorite ways to turn leftover chicken into a hearty meal that the whole family loves.

My top tip is to stir in the spinach right at the very end. This keeps the leaves bright green and prevents them from getting too soggy before you serve the bowls.

Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 4 ounces wide egg noodles
  • 1/2 cup heavy cream
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

10Instructions

  1. 1

Melt the butter in a large pot over medium heat.

  2. 2

Add the onion, carrots, and celery. Cook them until they soften, about 5 to 7 minutes.

  3. 3

Stir in the garlic and cook for another minute until it smells fragrant.

  4. 4

Sprinkle the flour over the vegetables and stir well to coat them, cooking for 1 minute.

  5. 5

Slowly pour in the chicken broth while whisking to keep everything smooth.

  6. 6

Bring the soup to a gentle simmer, then add the egg noodles.

  7. 7

Cook for about 8 minutes or until the noodles are tender.

  8. 8

Stir in the shredded chicken and the heavy cream, heating through for a few minutes.

  9. 9

Remove the pot from the heat and stir in the baby spinach until it wilts.

  10. 10

Season with salt and pepper to your liking and serve immediately.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. If the soup gets too thick, add a splash of extra broth when reheating it on the stove.
