I am absolutely in love with how easy this taco rice is to pull together on a busy night. It is a wonderful mix of classic taco flavors and filling rice that cooks all in one pan, which means you have very few dishes to wash when you are done.

I highly recommend using jasmine or basmati rice for this recipe because it stays nice and fluffy. If you want to save even more time, you can prep your toppings like avocado or cilantro while the rice simmers on the stove.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup long grain white rice, rinsed and drained
  • 1 1/2 cups low sodium beef broth
  • 1 cup salsa
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (4 ounces) diced green chiles, with liquid
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Optional toppings: cilantro, avocado, sour cream, or tortilla chips

9Instructions

  1. 1

Heat the olive oil in a large deep skillet or a Dutch oven over medium high heat.

  2. 2

Add the ground beef and all the dried spices to the pan.

  3. 3

Cook the meat while breaking it into small crumbles until it is fully browned and cooked through.

  4. 4

Stir in the rinsed rice, beef broth, salsa, black beans, and the green chiles with their liquid.

  5. 5

Bring the mixture to a boil, then turn the heat down to low and cover the pan with a lid.

  6. 6

Let the rice simmer for 15 minutes. If your lid has a steam vent, you can cover it with a small piece of foil to keep the moisture inside.

  7. 7

Turn off the heat and let the pan sit, still covered, for 5 minutes to finish softening the rice.

  8. 8

Remove the lid and gently stir in the shredded cheese until it is melted and combined.

  9. 9

Serve the rice in bowls and finish with your favorite taco toppings.

Tips

Store any leftovers in an airtight container in the fridge for up to four days. To reheat it, add a small splash of water or broth before putting it in the microwave to keep the rice from drying out. You can also swap the beef for ground turkey or chicken if you want a lighter option.
