There is nothing quite like a warm bowl of curry on a chilly evening. This recipe brings together protein rich lentils and a mix of fresh vegetables to create a meal that feels both wholesome and deeply satisfying.

I really love how the coconut milk adds a touch of creaminess without making the dish feel too heavy. It is a fantastic option for a weeknight dinner, and it tastes even better the next day after the spices have had time to settle.

Ingredients

  • 1 cup dried brown or green lentils, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, chopped
  • 2 medium carrots, sliced
  • 1 cup cauliflower florets, chopped
  • 1 medium potato, peeled and cubed
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 can (14 ounces) coconut milk
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

7Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the onion, bell pepper, carrots, potato, and cauliflower to the pot and sauté for about five minutes until they begin to soften.

  3. 3

Stir in the curry powder and cumin, cooking for one minute until fragrant.

  4. 4

Add the rinsed lentils, coconut milk, and vegetable broth to the pot.

  5. 5

Bring the mixture to a gentle boil, then turn the heat down to low and cover.

  6. 6

Simmer for about thirty to forty minutes or until the lentils and vegetables are tender.

  7. 7

Season with salt and pepper to taste before serving with a sprinkle of fresh cilantro.

Tips

Serve this over a bed of fluffy basmati rice or with warm naan bread on the side. You can store leftovers in an airtight container in the fridge for up to four days, or freeze individual portions for up to three months.
