This roasted chicken is a staple in my home because it requires very little effort to pull together. You get crispy skin and tender meat while the vegetables soak up all those delicious savory juices at the bottom of the pan.

My best tip is to make sure you dry the chicken skin thoroughly with a paper towel before rubbing it with oil. This simple step makes a huge difference in getting that golden brown finish everyone loves.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 1 pound baby potatoes, halved
  • 4 carrots, peeled and cut into chunks
  • 1 large yellow onion, sliced into wedges
  • 3 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, smashed

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken dry with paper towels and place it in the center of a large roasting pan.

  3. 3

Arrange the potatoes, carrots, onion, and garlic around the chicken.

  4. 4

Drizzle the olive oil over both the chicken and the vegetables.

  5. 5

Sprinkle the salt, pepper, and dried rosemary evenly over everything.

  6. 6

Roast for about 75 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the vegetables are tender.

  7. 7

Let the chicken rest for 10 minutes before carving so the juices stay inside the meat.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can shred the remaining meat to use in soups or sandwiches for a quick lunch the next day.
