If you love the classic Marry Me Chicken, you are going to adore this meatball version. It has all those iconic creamy and savory flavors packed into bite sized morsels that are perfect for a cozy weeknight dinner.

My top tip for this recipe is to not overmix the meat. Gently combine the ingredients until they are just incorporated, which ensures the meatballs stay light and tender instead of becoming tough.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chopped sun dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese for the sauce
  • Fresh basil for garnish

9Instructions

  1. 1

In a large bowl, mix the ground chicken, breadcrumbs, 1/4 cup Parmesan, egg, half the garlic, oregano, salt, and pepper.

  2. 2

Shape the mixture into small meatballs using your hands.

  3. 3

Heat the olive oil in a large skillet over medium heat.

  4. 4

Add the meatballs and brown them on all sides, then remove them from the pan and set aside.

  5. 5

In the same pan, add the remaining garlic and cook for one minute until fragrant.

  6. 6

Pour in the chicken broth and heavy cream, scraping up any brown bits from the bottom of the pan.

  7. 7

Stir in the sun dried tomatoes and the remaining Parmesan cheese, letting the sauce simmer until it thickens slightly.

  8. 8

Add the meatballs back into the skillet and simmer for another five to seven minutes until cooked through.

  9. 9

Serve warm with a sprinkle of fresh basil.

Tips

These meatballs taste wonderful served over pasta or mashed potatoes to soak up the extra sauce. If you have leftovers, store them in an airtight container in the fridge for up to three days.
