We have always loved falafel, but my husband loves it so much that we had to perfect a homemade version for our regular rotation. The secret is using plenty of fresh parsley and cilantro, which gives the centers a beautiful green color and a huge boost of flavor.

While deep frying gives you that classic golden crust and tender center, you can also pan fry or air fry these if you prefer. Just be sure to prep all your sides and sauces before you start cooking so you can enjoy these warm and crispy right out of the pan.

Ingredients

  • 2 cups dried chickpeas, soaked in water overnight and drained
  • 1 cup fresh parsley, packed
  • 1 cup fresh cilantro, packed
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon baking powder
  • 2 tablespoons all purpose flour
  • Oil for frying

7Instructions

  1. 1

Combine the soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, pepper, and cayenne in a food processor.

  2. 2

Pulse the mixture until it is finely minced but not a smooth paste. It should hold together when pressed.

  3. 3

Transfer the mixture to a bowl, stir in the baking powder and flour, then cover and refrigerate for at least 30 minutes.

  4. 4

Form the mixture into small balls or patties using your hands or a scoop.

  5. 5

Heat a few inches of oil in a heavy pot to 350 degrees Fahrenheit.

  6. 6

Fry the falafel in small batches for about 3 to 4 minutes until they are a deep golden brown.

  7. 7

Drain the cooked falafel on a paper towel lined plate and serve warm.

Tips

Serve these warm inside a pita with crunchy vegetables and a generous drizzle of tahini sauce. If you have leftovers, keep them in the fridge for up to three days and reheat them in the oven to bring back the crispness.
