There is something so satisfying about a good steak salad, especially when it is loaded with fresh avocado and crunchy cucumbers. My family asks for this meal all the time because it is hearty enough to fill you up but still feels light and refreshing.

My top tip for this salad is to let your steak rest for at least five minutes before you slice it. This keeps all those delicious juices inside the meat rather than on your cutting board, making every bite much more tender.

Ingredients

  • 1 pound flank or sirloin steak
  • 1 teaspoon olive oil
  • Salt and black pepper to taste
  • 4 cups chopped romaine lettuce
  • 1 cup sweet corn kernels
  • 1 cup diced cucumber
  • 1 ripe avocado, diced
  • 1 jalapeño, seeded and minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey

7Instructions

  1. 1

Rub the steak with a little olive oil, salt, and pepper.

  2. 2

Heat a skillet over medium high heat and cook the steak to your preferred level of doneness, usually about 4 to 5 minutes per side.

  3. 3

Remove the steak from the pan and let it rest on a board for 5 to 10 minutes before slicing it into thin strips.

  4. 4

In a small bowl, whisk together the olive oil, lime juice, and honey to create your dressing.

  5. 5

In a large salad bowl, combine the romaine, corn, cucumber, avocado, and jalapeño.

  6. 6

Add the sliced steak to the top of the vegetables.

  7. 7

Drizzle the dressing over the salad right before serving and toss everything gently to combine.

Tips

Store the dressing separately from the salad if you are planning to have leftovers to keep the greens crisp. If you have extra steak, it tastes great served cold over a bed of spinach for lunch the next day.
