Hearty 15 Bean Soup
This comforting and protein packed soup is the best way to turn a bag of assorted beans into a warm meal.
enzo81.xyzThere is something so special about a big pot of bean soup simmering on the stove. This recipe uses a classic bag of fifteen bean mix to create a soup that is thick, filling, and deeply savory with every spoonful.
I love making this when the weather gets a little chilly or whenever I have leftover ham from a holiday dinner. If you want to keep this dish meat free, you can easily swap the ham for a dash of smoked paprika or a splash of soy sauce to get that same savory depth.
Ingredients
- 1 pound 15 bean soup mix
- 1 large yellow onion, diced
- 2 large carrots, sliced
- 1 green bell pepper, diced
- 1 can diced tomatoes, 14.5 ounces
- 1 ham hock or 2 cups cooked ham, chopped
- 8 cups vegetable or chicken broth
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- Salt to taste
6Instructions
- 1
Rinse the bean mix thoroughly in cold water and pick out any debris, then soak the beans in a large bowl of water for at least eight hours or overnight.
- 2
Drain the soaked beans and place them into a large soup pot or Dutch oven.
- 3
Add the onion, carrots, bell pepper, garlic, tomatoes, and ham to the pot.
- 4
Pour in the broth and add the oregano and black pepper.
- 5
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for two to three hours until the beans are tender.
- 6
Taste the soup and add salt if needed, then remove the ham hock if used, shred any meat from it, and stir the meat back into the pot.
Tips
Serve this soup with a side of crusty bread or warm cornbread to soak up the broth. Leftovers stay fresh in the fridge for up to five days and actually taste even better the next day as the flavors continue to blend. You can also freeze portions of this soup in airtight containers for up to three months.
