Pasta e Ceci is a classic Italian staple that relies on pantry basics to create something truly special. It is one of those meals that tastes just as good on a busy weeknight as it does on a slow Sunday afternoon.

Most people love this dish because it is incredibly filling and inexpensive to make. If you want a thicker soup, try mashing a few of the chickpeas against the side of the pot before you add the pasta.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 can crushed tomatoes
  • 1 cup small pasta like ditalini or small shells
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Grated parmesan cheese for serving

8Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the onion and cook until it is soft and translucent.

  3. 3

Stir in the garlic and cook for about one minute until fragrant.

  4. 4

Add the chickpeas, broth, tomatoes, and rosemary to the pot.

  5. 5

Bring the mixture to a gentle boil.

  6. 6

Stir in the pasta and reduce the heat to a simmer.

  7. 7

Cook until the pasta is tender, usually about 10 minutes, stirring occasionally so the pasta does not stick.

  8. 8

Season with salt and pepper before serving hot with a generous sprinkle of parmesan cheese.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. Keep in mind that the pasta will soak up the broth as it sits, so you might need to add a splash of water when you reheat it. Serve this with a side of crusty bread to soak up all the extra flavor.
