Steak Tacos with Creamy Avocado Salsa Verde
These steak tacos feature a vibrant, silky avocado salsa verde that makes every bite feel like a celebration.
enzo81.xyzI have a soft spot for a good steak taco, but this version has quickly climbed to the top of my list. The real magic happens with the creamy avocado salsa verde, which uses fresh, raw tomatillos to keep the flavor bright and tangy. It pairs perfectly with the savory, lime marinated steak.
While there are a few parts to this meal, the process is very simple to manage. I recommend getting your steak into the marinade first, so you can prep the salsa and toppings while the flavors soak in. Don't be shy with that green sauce when you start serving.
Ingredients
- 1 lb flank or skirt steak
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 2 tablespoons olive oil
- 4 medium tomatillos, husked and rinsed
- 1 ripe avocado
- 1/2 cup fresh cilantro
- 1 jalapeño, seeded
- 1 tablespoon lime juice for the salsa
- 2 cups shredded cabbage
- 1/2 cup white onion, finely chopped
- 8 small corn tortillas, warmed
- Salt to taste
6Instructions
- 1
In a small bowl, whisk together the lime juice, garlic, chili powder, cumin, and olive oil. Rub this mixture over the steak and let it marinate for at least thirty minutes.
- 2
To make the salsa, add the raw tomatillos, avocado, cilantro, jalapeño, lime juice, and a pinch of salt to a blender. Process until the mixture is smooth and creamy.
- 3
Toss the shredded cabbage with a squeeze of lime and a pinch of salt in a small bowl.
- 4
Heat a heavy skillet or grill pan over medium high heat. Cook the steak for about four to five minutes per side, or until it reaches your desired level of doneness.
- 5
Let the steak rest on a cutting board for five minutes before slicing it into thin strips against the grain.
- 6
Assemble your tacos by placing the steak on warm corn tortillas and topping them with the creamy avocado salsa, cabbage, onion, and extra cilantro.
Tips
Store any leftover salsa in an airtight container in the fridge for up to two days. If you like your steak extra tender, be sure to slice it against the grain after it rests.
