There is truly nothing better than a classic baked potato when you need a comforting meal. This method is my favorite because it requires very little effort but always delivers that perfect contrast between a salted, crunchy skin and a soft, airy inside.

I love serving these as a main dish loaded with butter, sour cream, and chives. It is an affordable dinner that works perfectly on a busy weeknight when you want something warm and filling without any stress.

Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon kosher salt
  • Optional toppings: butter, sour cream, shredded cheddar cheese, chopped green onions, bacon bits

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Scrub the potatoes thoroughly under cold water and pat them completely dry with a paper towel.

  3. 3

Poke each potato several times with a fork to allow steam to escape while they bake.

  4. 4

Rub the outside of each potato with a little bit of olive oil.

  5. 5

Sprinkle the salt generously all over the skin of each potato.

  6. 6

Place the potatoes directly on the center oven rack and bake for 60 minutes or until they are soft when squeezed.

  7. 7

Remove from the oven, slice open the top, and fluff the insides with a fork before adding your favorite toppings.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in the microwave or place them back in a hot oven for ten minutes to get that crispy skin back.
