Quick and Easy Ground Beef Stir Fry
This hearty stir fry is a budget friendly way to satisfy your takeout cravings using simple ground beef and colorful fresh vegetables.
enzo81.xyzGround beef is such a handy staple to keep in the freezer for busy weeknights when you want something savory and fast. This recipe is a favorite in my house because it uses affordable ingredients but still packs a huge punch of flavor with a quick homemade sauce.
Since you do not need to marinate the meat like you would with steak, this whole meal comes together in just thirty minutes. It is a fantastic way to clean out your produce drawer, so feel free to swap in whatever vegetables you currently have on hand.
Ingredients
- 1 pound lean ground beef
- 2 tablespoons vegetable oil
- 3 cups mixed vegetables, such as bell peppers, broccoli, and carrots
- 3 cloves garlic, minced
- 1/3 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- Cooked white or brown rice for serving
7Instructions
- 1
Whisk the soy sauce, brown sugar, rice vinegar, sesame oil, and ginger in a small bowl until the sugar dissolves.
- 2
In a separate small cup, stir the cornstarch and water together until smooth to make a slurry.
- 3
Heat a large skillet or wok over medium high heat and add the ground beef. Break it into large chunks while cooking until browned.
- 4
Add the chopped vegetables to the skillet with the beef and stir fry for about 5 minutes until they are tender but still crisp.
- 5
Add the minced garlic and cook for another minute until fragrant.
- 6
Pour the sauce mixture into the pan and stir it in. Add the cornstarch slurry and cook for another minute until the sauce thickens and coats everything nicely.
- 7
Serve immediately over warm bowls of rice.
Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat this in the microwave or a pan. If you like extra heat, feel free to add a pinch of red pepper flakes or a drizzle of chili oil before serving.
