This snack cake is a favorite in my house because it is so easy to whip up whenever guests drop by. The honey adds a lovely floral sweetness that pairs perfectly with the almond flavor, and the texture is so light you would never guess it is gluten free.

You do not need a fancy mixer for this one. Just grab a whisk and a large bowl and you will have this loaf ready for the oven in a matter of minutes. It is the best treat to keep on hand for a quick afternoon snack.

Ingredients

  • 2 large eggs
  • 1/2 cup honey
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/4 cup sliced almonds for topping

7Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a standard loaf pan with parchment paper.

  2. 2

In a large bowl, whisk together the eggs, honey, melted coconut oil, vanilla, and almond milk until smooth.

  3. 3

Add the almond flour, coconut flour, baking powder, and salt to the wet mixture.

  4. 4

Stir everything together with a spoon until the batter is well combined and no clumps remain.

  5. 5

Pour the batter into your prepared loaf pan and sprinkle the sliced almonds over the top.

  6. 6

Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

Let the cake cool in the pan for 10 minutes before lifting it out to cool completely on a wire rack.

Tips

Store this cake in an airtight container at room temperature for up to three days. If you want to keep it longer, you can wrap slices individually and freeze them for up to one month. Serve with a fresh cup of tea or coffee for a cozy afternoon treat.
