There is something so comforting about a batch of warm oatmeal cookies straight from the oven. These scotchies are a personal favorite because they strike the perfect balance between crispy edges and soft, chewy centers that keep you coming back for another one.

I love using a bit of brown sugar and cinnamon to bring out that nostalgic, old fashioned taste. If you want to take them to the next level, just sprinkle a tiny pinch of flaky sea salt on top right after you take them out of the oven.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups old fashioned rolled oats
  • 1 1/2 cups butterscotch morsels

8Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is light and creamy.

  3. 3

Add the eggs one at a time, followed by the vanilla extract, and mix until well combined.

  4. 4

In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

  5. 5

Gradually stir the dry ingredients into the butter mixture, then fold in the rolled oats and butterscotch morsels.

  6. 6

Scoop rounded tablespoons of dough onto your prepared baking sheet, spacing them about two inches apart.

  7. 7

Bake for 10 to 12 minutes or until the edges are lightly golden and set, but the centers still look soft.

  8. 8

Let the cookies cool on the baking sheet for five minutes before moving them to a wire rack to finish cooling completely.

Tips

Store these cookies in an airtight container at room temperature for up to five days to keep them soft. If you prefer a warm treat, pop a single cookie in the microwave for ten seconds before serving.
