Steph's Quick Chickpea Curry
A creamy, flavorful, and comforting curry that comes together in just twenty minutes.
enzo81.xyzWhen the weather turns chilly, I always find myself craving something warm and nourishing. This chickpea curry is a staple in my kitchen because it is so easy to pull together after a long day, and it never fails to make the whole house smell wonderful.
I love serving this with fluffy rice and a big spoonful of chili crisp for an extra kick. If you want a complete meal, try adding a simple cucumber salad on the side to balance out the richness of the curry sauce.
Ingredients
- 2 cans chickpeas, drained and rinsed
- 1 can full fat coconut milk
- 2 tablespoons yellow curry powder
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups fresh baby spinach
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooked jasmine rice for serving
- Chili crisp for topping
8Instructions
- 1
Heat the olive oil in a large skillet or pot over medium heat.
- 2
Add the onion and cook until it becomes soft and translucent, which usually takes about five minutes.
- 3
Stir in the minced garlic and curry powder, cooking for another minute until fragrant.
- 4
Pour in the coconut milk and add the drained chickpeas, stirring well to combine everything.
- 5
Bring the mixture to a gentle simmer and let it cook for about ten minutes so the sauce can thicken slightly.
- 6
Fold in the fresh spinach and cook just until it wilts into the curry.
- 7
Season with salt and pepper to your liking.
- 8
Serve warm over bowls of jasmine rice and top with a spoonful of chili crisp.
Tips
Store any leftovers in an airtight container in the fridge for up to three days. This curry actually tastes even better the next day as the spices have more time to blend together. You can reheat it gently on the stovetop or in the microwave.
