There is nothing quite like fresh zucchini straight from the garden in the heat of summer. I love finding new ways to use up the extra produce, and this gratin has quickly become a family favorite at my table. It is comforting, simple to put together, and feels just a little bit fancy.

My best tip for this recipe is to squeeze out the moisture from your shredded or sliced zucchini using a clean kitchen towel before you start cooking. This keeps the dish from becoming watery and ensures that golden brown crust stays perfectly crispy.

Ingredients

  • 4 medium zucchinis, sliced into half moons
  • 2 tablespoons butter
  • 1 small onion, diced
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere or cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste

9Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and grease a medium baking dish.

  2. 2

Melt the butter in a large skillet over medium heat.

  3. 3

Add the diced onion and zucchini to the skillet, cooking for about 5 to 7 minutes until the zucchini is just tender.

  4. 4

Remove the pan from the heat and stir in the heavy cream, half of the shredded cheese, and half of the Parmesan.

  5. 5

Season the mixture with salt and pepper to your liking.

  6. 6

Pour the zucchini mixture into your prepared baking dish.

  7. 7

In a small bowl, combine the remaining cheeses with the breadcrumbs and parsley.

  8. 8

Sprinkle the breadcrumb mixture evenly over the top of the zucchini.

  9. 9

Bake for 20 to 25 minutes until the top is bubbling and golden brown.

Tips

Serve this gratin warm alongside a simple roast chicken or grilled steak. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat in the oven to keep the topping crunchy.
