There is something so soothing about a big bowl of rice served with a light, flavorful broth and juicy chicken. This has become my go to recipe when I want a meal that feels like a warm hug but does not take all evening to prepare.

The secret is the quick marinade for the chicken. The bit of brown sugar helps it get a beautiful golden color in the pan, and the lime adds just enough brightness to keep the ginger and garlic broth from feeling too heavy. I hope you enjoy this as much as my family does.

Ingredients

  • 1 pound chicken breast, sliced into thin strips
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 2 cups cooked white rice
  • 3 cups chicken broth
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • Salt and pepper to taste

6Instructions

  1. 1

In a medium bowl, whisk together the brown sugar, lime juice, and soy sauce. Add the chicken strips and toss well to coat. Let this sit for about 10 minutes.

  2. 2

Heat the vegetable oil in a large skillet over medium high heat. Add the chicken and cook for about 5 to 7 minutes until it is cooked through and lightly browned. Remove the chicken from the pan and set it aside.

  3. 3

In the same skillet, add the minced garlic and ginger. Cook for about 1 minute until fragrant.

  4. 4

Pour in the chicken broth and bring it to a gentle simmer. Let it cook for 5 minutes so the flavors meld together.

  5. 5

Divide the cooked rice into bowls. Top each bowl with the cooked chicken and pour the hot broth over the top.

  6. 6

Garnish with the sliced green onions and serve immediately.

Tips

You can store leftovers in an airtight container in the fridge for up to two days. If the rice soaks up too much broth, just add a splash of extra warm chicken broth before reheating. This is also great with a side of steamed bok choy or snap peas if you want extra greens.
