Chicken with Cajun Cream Sauce
This comforting pan fried chicken is smothered in a savory, tomatoey Cajun cream sauce that tastes like a cozy fall evening.
enzo81.xyzThere is something truly special about a dinner that feels like a warm hug at the end of a long day. This Cajun cream sauce hits the spot with its rich, savory flavor and delicate notes of shallot and tomato. It is one of those meals that brings the whole family together, leaving everyone with full bellies and happy hearts.
I love serving this chicken with a big scoop of mashed potatoes and some fresh green beans to soak up every last drop of the gravy. If you find yourself wanting a change, you can easily swap the chicken for jumbo shrimp which poach beautifully right in the sauce.
Ingredients
- 1 tablespoon avocado oil
- 1 lb chicken breast, sliced into thin cutlets
- 2 1/2 teaspoons Cajun seasoning, divided
- 1 tablespoon butter
- 1 shallot, minced or thinly sliced
- 1 tablespoon tomato paste
- 1 tablespoon all purpose flour
- 3/4 cup heavy cream
- 1 cup chicken broth
7Instructions
- 1
Season your chicken cutlets with 1 1/2 teaspoons of the Cajun seasoning.
- 2
Heat the avocado oil in a skillet over medium high heat. Cook the chicken for 3 to 4 minutes per side until golden and cooked through, then remove the chicken from the pan and set it aside.
- 3
Wipe the skillet clean and reduce the heat to medium low. Add the butter and shallots, cooking until they are soft and fragrant.
- 4
Stir in the tomato paste and the remaining 1 teaspoon of Cajun seasoning. Cook for 3 to 4 minutes until the paste turns a deep, rich color.
- 5
Add the flour to the pan and stir for 2 to 3 minutes to toast it slightly.
- 6
Gradually whisk in the chicken broth until smooth, then stir in the heavy cream. Let the sauce simmer for 5 to 10 minutes until it thickens to your liking.
- 7
Return the cooked chicken to the pan to warm through in the sauce, then serve immediately.
Tips
Store any leftover sauce in an airtight container in the fridge for up to three days. You can easily reheat it on the stove over low heat, adding a splash of broth if it gets too thick. This meal is best served fresh alongside fluffy mashed potatoes or steamed vegetables.
