When the leaves start to change color and the air gets chilly, there is nothing better than a big pot of soup simmering on the stove. This recipe is one of my favorite ways to use up fresh seasonal produce while making something that feels like a hug in a bowl.

This soup is very forgiving and easy to customize with whatever you have in your pantry. If you want to make it ahead of time, it actually tastes even better the next day after all the flavors have had time to settle together.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced into rounds
  • 2 stalks celery, chopped
  • 1 medium butternut squash, peeled and cubed
  • 4 cups vegetable broth
  • 1 can diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 cups fresh kale, chopped

7Instructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the onion, carrots, and celery. Cook for about five minutes until the vegetables start to soften.

  3. 3

Stir in the garlic and cook for one more minute until fragrant.

  4. 4

Add the cubed butternut squash, vegetable broth, tomatoes, thyme, and bay leaf.

  5. 5

Bring the liquid to a boil, then turn the heat down to low. Cover the pot and simmer for twenty minutes or until the squash is tender.

  6. 6

Stir in the kale and cook for two minutes until it wilts.

  7. 7

Remove the bay leaf, season with salt and pepper, and serve warm.

Tips

Serve this soup with a side of crusty bread for dipping. You can store leftovers in an airtight container in the fridge for up to four days or freeze them for up to three months.
