If you love chicken parmesan but want something a bit easier for a weeknight dinner, this soup is for you. It packs all those familiar Italian flavors into one pot, saving you the hassle of breading and frying chicken. It is warm, creamy, and guaranteed to satisfy those comfort food cravings.

My favorite part of this dish is definitely the topping. By browning Italian breadcrumbs and extra Parmesan in a little butter, you get a lovely crunch that mimics the texture of a traditional chicken parm crust. Serve it with a side of garlic bread and you have a perfect meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 6 cups chicken broth
  • 8 ounces rotini pasta
  • 3 cups cooked shredded chicken
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh chopped basil for garnish
  • 2 tablespoons butter
  • 1 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese

9Instructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the diced onion and cook for about 5 minutes until soft.

  3. 3

Stir in the garlic, Italian seasoning, salt, and pepper, and cook for another minute.

  4. 4

Pour in the crushed tomatoes, tomato sauce, and chicken broth, then bring the mixture to a gentle simmer.

  5. 5

Add the rotini pasta and cook until it is al dente.

  6. 6

Stir in the shredded chicken, heavy cream, and the first cup of Parmesan cheese until the cheese is melted and combined.

  7. 7

In a separate small skillet, melt the butter over medium heat.

  8. 8

Add the breadcrumbs and the remaining quarter cup of Parmesan to the skillet.

  9. 9

Toast the breadcrumb mixture for 2 to 3 minutes until golden brown, then sprinkle it over the soup before serving with a garnish of fresh basil.

Tips

Try to keep the pasta slightly al dente since it will continue to soften in the hot broth. If you have leftovers, store the breadcrumb topping in a separate container so it stays crunchy for your next meal.
