When the weather gets chilly, there is nothing quite like a big bowl of French onion soup. This pasta version captures that same magic but makes it a lot easier to pull together for a weeknight dinner. By cooking the noodles right in the savory broth, you get a sauce that is rich, thick, and perfectly clings to every bite.

My biggest tip for this recipe is to be patient with your onions. Let them cook low and slow until they turn a beautiful deep golden brown. This step is where all the deep, savory flavor comes from, so try not to rush it.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup dry white wine
  • 4 cups beef broth
  • 8 ounces pasta, such as linguine or fettuccine
  • 1/2 cup heavy cream
  • 1 cup grated Gruyere cheese
  • Salt and black pepper to taste

8Instructions

  1. 1

Melt the butter and olive oil in a large pot or deep skillet over medium heat.

  2. 2

Add the sliced onions and cook them for about twenty minutes, stirring occasionally, until they are soft and deep brown.

  3. 3

Stir in the garlic and fresh thyme, cooking for another minute until fragrant.

  4. 4

Pour in the white wine and scrape up any brown bits from the bottom of the pot.

  5. 5

Add the beef broth and bring the mixture to a gentle boil.

  6. 6

Add the dry pasta to the pot. Stir frequently to prevent sticking and cook until the pasta is tender and most of the liquid has absorbed.

  7. 7

Stir in the heavy cream and half of the Gruyere cheese until smooth.

  8. 8

Top the pasta with the remaining cheese and serve while warm.

Tips

This dish is best served fresh from the stove, but leftovers keep well in the fridge for two days. If you want a crispy top, you can transfer the pasta to a baking dish, add the cheese, and pop it under the broiler for two minutes.
