There is nothing quite like a warm burrito to satisfy a big hunger after a long day. These are packed with protein from the ground beef and pinto beans, and the melted cheese makes every bite taste great. It is a very reliable recipe that my family asks for all the time.

My favorite thing about these is how well they store in the freezer. I often make a big batch on Sunday so I have easy dinners ready for those busy weeknights when I do not have much time to cook. Just toast them in a skillet until they are golden brown and crispy.

Ingredients

  • 1 pound lean ground beef
  • 1 can pinto beans, rinsed and drained
  • 1 cup of your favorite salsa
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 6 large flour tortillas
  • Oil for the skillet

9Instructions

  1. 1

Heat a large skillet over medium heat and cook the ground beef until it is browned, making sure to break it up with a wooden spoon.

  2. 2

Drain any excess grease from the pan.

  3. 3

Add the pinto beans, salsa, chili powder, cumin, and garlic powder to the beef.

  4. 4

Stir everything together and let it simmer for about 5 minutes so the flavors blend well.

  5. 5

Warm the tortillas in a microwave or a clean pan so they are soft and easy to roll.

  6. 6

Place a spoonful of the beef mixture in the center of each tortilla and top with a generous sprinkle of cheese.

  7. 7

Fold in the sides of the tortilla and roll it up tightly.

  8. 8

Lightly grease your skillet and place the burritos seam side down.

  9. 9

Cook for 2 to 3 minutes on each side until the outside is toasted and the cheese is melted.

Tips

To freeze these, let them cool completely after cooking then wrap each one in foil or plastic wrap. When you want to eat one, let it thaw in the fridge overnight or microwave it for a minute before crisping it up in a hot pan.
