There is something so special about a classic loaded baked potato, but making them for a big group can be a chore. This casserole gives you that same delicious flavor with much less effort in the kitchen.

It is my go to side dish for family dinners and holiday gatherings. My best tip is to use freshly grated cheese instead of the pre bagged kind because it melts so much smoother and tastes way better.

Ingredients

  • 5 pounds russet potatoes, peeled and cut into 1 inch cubes
  • 1/2 cup butter, melted
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 cups sharp cheddar cheese, shredded
  • 8 slices bacon, cooked until crispy and crumbled
  • 1/2 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

9Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

  2. 2

Place the cubed potatoes in a large pot and cover them with cold water. Bring to a boil and cook for about 10 minutes until they are tender but not falling apart.

  3. 3

Drain the potatoes well and let them steam dry for a few minutes.

  4. 4

In a large bowl, whisk together the melted butter, sour cream, mayonnaise, garlic powder, salt, and pepper.

  5. 5

Gently fold the cooked potatoes into the creamy mixture until they are well coated.

  6. 6

Stir in half of the bacon, half of the green onions, and 1 cup of the cheese.

  7. 7

Transfer the mixture into your prepared baking dish and spread it out evenly.

  8. 8

Top the casserole with the remaining cheese and bake for 25 to 30 minutes until the cheese is bubbly.

  9. 9

Remove from the oven and top with the rest of the bacon and green onions before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat individual portions in the microwave or place the whole dish in a low oven until warmed through. This pairs perfectly with grilled steak or roasted chicken.
