Fall is truly the best time for cooking because of the wonderful produce like sweet potatoes, squash, and apples. I love this sheet pan dinner because it keeps cleanup to a minimum while filling the kitchen with such a warm and inviting aroma.

My top tip for this recipe is to cut your squash into uniform pieces so they all roast perfectly at the same time. It is a fantastic way to enjoy a cozy meal even on your busiest weeknights.

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 pound mild Italian sausage, cut into thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red onion, cut into wedges
  • 1 crisp apple, cored and chopped

6Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the cubed squash, sliced sausage, onion wedges, and chopped apples onto a large rimmed baking sheet.

  3. 3

Drizzle the olive oil over the top and sprinkle with the sage, salt, and pepper.

  4. 4

Toss everything together with your hands until the ingredients are evenly coated.

  5. 5

Spread the mixture out into a single layer so it roasts evenly.

  6. 6

Bake for about 25 to 30 minutes, tossing halfway through, until the squash is tender and the sausage is golden brown.

Tips

This dish stores well in the fridge for up to three days in an airtight container. If you want a little extra crunch, you can sprinkle some toasted pecans over the top right before you serve it.
