When the craving for chicken nuggets hits, it is so much better to make them at home. These are coated in breadcrumbs and baked until perfectly golden and crispy, which makes them feel lighter than the deep fried versions you find at restaurants.

My kids absolutely love these because they are super crunchy on the outside and tender on the inside. Serve them up with a side of crispy broccoli and sweet potato fries for a complete meal that feels like a treat but is much better for you.

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, lightly beaten
  • 2 tablespoons olive oil

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

In a shallow bowl, mix together the panko, parmesan, garlic powder, onion powder, salt, and pepper.

  3. 3

Dip each piece of chicken into the beaten eggs, letting the excess drip off.

  4. 4

Roll the egg coated chicken in the breadcrumb mixture, pressing gently to make sure the coating sticks well.

  5. 5

Place the nuggets on the prepared baking sheet in a single layer.

  6. 6

Drizzle the olive oil over the nuggets to help them get extra crispy.

  7. 7

Bake for 15 to 20 minutes, flipping them halfway through, until the chicken is cooked through and the outside is golden brown.

Tips

Store any leftover nuggets in an airtight container in the fridge for up to 3 days. To reheat them, pop them back in the oven or an air fryer at 350 degrees until they are warmed through and crispy again.
