There is something so satisfying about the smell of a roasting chicken filling the house. It is the kind of meal that brings everyone to the table and makes life feel a little more peaceful after a busy day.

I love this recipe because the leftovers are just as good as the first night. My favorite trick is to add extra root vegetables to the pan so the side dish cooks right along with the main course.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 tablespoons olive oil
  • 1 large lemon, halved
  • 4 cloves garlic, smashed
  • 2 teaspoons dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound baby potatoes

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken dry with paper towels to ensure crispy skin.

  3. 3

Rub the chicken all over with olive oil, then season generously with salt, pepper, and rosemary.

  4. 4

Stuff the lemon halves and garlic cloves inside the chicken cavity.

  5. 5

Place the potatoes in the bottom of a roasting pan and nestle the chicken on top of them.

  6. 6

Roast for about 60 to 75 minutes, or until the juices run clear and the chicken reaches an internal temperature of 165 degrees.

  7. 7

Let the chicken rest for 10 minutes before carving so the juices stay inside.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can shred the cold meat to use in salads or wraps for lunch the next day.
