When you want a comforting bowl of chili but do not have hours to stand by the stove, this recipe is your best friend. It uses the pressure cooker to meld all those savory spices and hearty ingredients together so you get a deep, complex flavor that tastes like it spent all day simmering.

My top tip for this chili is to make sure you brown the beef well before adding the liquids. That extra time in the pan creates a delicious base that makes the whole meal taste much richer.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 28 ounces crushed tomatoes
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth

6Instructions

  1. 1

Turn your Instant Pot to the saute setting and heat the olive oil.

  2. 2

Add the ground beef and onion to the pot, cooking until the beef is browned and the onion is soft.

  3. 3

Stir in the garlic, chili powder, cumin, paprika, salt, and pepper, cooking for one minute until fragrant.

  4. 4

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth, stirring well to combine.

  5. 5

Secure the lid and set the valve to sealing. Cook on high pressure for 15 minutes.

  6. 6

Let the pressure release naturally for 10 minutes, then carefully vent any remaining pressure before opening.

Tips

Serve this chili in big bowls topped with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro. If you have leftovers, keep them in an airtight container in the fridge for up to four days, as the flavor actually gets even better the next day.
