There is something so special about a bowl of soup that warms you up from the inside out. This creamy sausage tortellini soup is a favorite in my house because it feels like a big hug in a bowl, and it is filling enough to serve as a complete meal for the whole family.

I love how the three cheese tortellini soak up all those rich flavors, while the kale adds a nice bit of color and texture. If you have any leftovers, the soup actually tastes even better the next day once the flavors have had more time to mingle together.

Ingredients

  • 1 pound Italian pork sausage
  • 1 cup chopped carrots
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 1 cup crushed tomatoes
  • 1 package refrigerated three cheese tortellini
  • 2 cups chopped kale
  • 1/2 cup heavy cream
  • Salt and pepper to taste

6Instructions

  1. 1

Brown the sausage in a large pot or Dutch oven over medium heat until it is fully cooked, then remove the sausage and set it aside.

  2. 2

Add the carrots and onions to the same pot and cook until they are soft, then stir in the garlic and cook for another minute.

  3. 3

Mix in the tomato paste, chicken broth, and crushed tomatoes, bringing the liquid to a gentle simmer.

  4. 4

Add the cooked sausage back into the pot along with the tortellini pasta.

  5. 5

Cook for about five to seven minutes, or until the tortellini are tender.

  6. 6

Stir in the chopped kale and heavy cream, allowing the kale to wilt for just a couple of minutes before serving hot.

Tips

Serve this soup with a side of warm crusty bread to soak up the creamy broth. If you have leftovers, store them in an airtight container in the fridge for up to three days, though keep in mind the pasta will absorb more liquid over time.
