This smoky andouille lentil soup is exactly what I want simmering on my stove when the weather gets a little chilly. It is the perfect combination of protein, fiber, and veggies, and it packs a big punch of zesty flavor in every single spoonful.

Most of the cooking time is just the lentils doing their thing, which makes this a great dinner for busy nights. A little squeeze of fresh lemon juice at the end really brings all those savory flavors together, so do not skip that step.

Ingredients

  • 1 tablespoon olive oil
  • 12 ounces andouille sausage, sliced into rounds
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 cup dried brown or green lentils, rinsed
  • 1 can fire roasted diced tomatoes
  • 6 cups vegetable or chicken broth
  • 4 cups chopped kale, stems removed
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

8Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the sliced andouille sausage and cook until it starts to brown, which takes about 5 minutes.

  3. 3

Add the onion, carrots, and celery to the pot and cook until they soften, about 6 to 8 minutes.

  4. 4

Stir in the garlic and smoked paprika and cook for another minute until fragrant.

  5. 5

Pour in the lentils, fire roasted tomatoes with their juices, and the broth.

  6. 6

Bring the soup to a boil, then turn the heat down to low and simmer for about 30 to 40 minutes, or until the lentils are tender.

  7. 7

Stir in the chopped kale and cook for 2 to 3 minutes until it wilts.

  8. 8

Remove the pot from the heat, stir in the lemon juice, and add salt and pepper to taste before serving.

Tips

This soup keeps beautifully in the fridge for up to four days and often tastes even better the next day. You can serve it with a slice of crusty sourdough bread for dipping, or just enjoy it on its own for a lighter meal.
