This soup is a lifesaver on busy weeknights when you want a meal that feels like home cooking. It combines ground beef, tender rice, and colorful bell peppers in a savory tomato broth that warms you from the inside out.

I love that you can throw this all into one pot and let it simmer. If you want to save time, you can even cook the rice ahead of time or use leftover rice to make the process go a little faster.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 3 bell peppers, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1 cup uncooked white rice
  • Salt and pepper to taste

6Instructions

  1. 1

Brown the ground beef and onion in a large pot over medium heat until the meat is cooked through.

  2. 2

Drain any excess fat from the pot and add the minced garlic, cooking for one minute until fragrant.

  3. 3

Stir in the chopped bell peppers, crushed tomatoes, beef broth, and Italian seasoning.

  4. 4

Bring the mixture to a gentle boil, then turn the heat down to low and stir in the uncooked rice.

  5. 5

Cover the pot and simmer for about 20 minutes or until the rice is tender.

  6. 6

Season with salt and pepper to taste and serve warm.

Tips

Leftovers store beautifully in an airtight container in the fridge for up to four days. If the soup thickens too much after cooling, just add a splash of beef broth when you reheat it. Top each bowl with a sprinkle of shredded cheddar cheese for extra comfort.
