This creamy soup has become a staple in my kitchen because it is so comforting and simple to put together. It uses butternut squash and red lentils to create a thick, satisfying texture that keeps you full for hours.

I love how the curry spices bring a gentle heat that warms you up from the inside out. My best tip is to use a high quality vegetable broth, as it really makes the natural sweetness of the squash shine.

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup dried red lentils, rinsed
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 4 cups vegetable broth
  • 1 can full fat coconut milk
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

7Instructions

  1. 1

Heat the olive oil in a large pot over medium heat and sauté the onion until it turns soft and translucent.

  2. 2

Add the garlic, curry powder, and ginger to the pot and cook for one minute until fragrant.

  3. 3

Stir in the cubed butternut squash, rinsed lentils, and vegetable broth.

  4. 4

Bring the mixture to a boil, then lower the heat and simmer for 25 minutes or until the squash is tender.

  5. 5

If using a slow cooker, add all ingredients except the coconut milk and cook on low for 6 hours.

  6. 6

Stir in the coconut milk and use an immersion blender to puree the soup until it reaches your desired consistency.

  7. 7

Season with salt and pepper, then serve warm with a sprinkle of fresh cilantro.

Tips

Store any leftovers in an airtight container in the fridge for up to four days. This soup also freezes beautifully, so feel free to save a portion for a busy weeknight meal later on.
