Using sourdough discard for corn dog batter is such a fun way to give this classic snack a little extra flavor. It creates a beautiful golden crust that stays crispy much longer than the frozen kind you buy at the store.

If you have kids at home, they will love helping with the dipping part of the process. Just make sure the hot dogs are very dry before you start so the batter does not slide off while frying.

Ingredients

  • 8 hot dogs
  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/2 cup sourdough starter discard
  • 2 tablespoons melted butter
  • 1 tablespoon honey
  • 6 cups vegetable oil for frying

10Instructions

  1. 1

Pour the oil into a large pot and heat it to 350 degrees using a thermometer to keep track.

  2. 2

Dry each hot dog thoroughly with a paper towel and push a wooden stick into the center of each one.

  3. 3

Whisk the cornmeal, flour, baking powder, and salt together in a large mixing bowl.

  4. 4

In a separate bowl, whisk the egg, milk, sourdough discard, butter, and honey until the mixture is smooth.

  5. 5

Add the wet ingredients to the dry bowl and stir until everything is well combined.

  6. 6

Fill a tall glass almost to the top with the batter and dip the hot dogs in one at a time.

  7. 7

Gently place the coated hot dog into the hot oil and hold it for a few seconds so the batter sets before letting go.

  8. 8

Fry the corn dogs for about three minutes, turning them with tongs so they brown evenly on all sides.

  9. 9

Lift them out of the oil and place them on a wire cooling rack to drain.

  10. 10

Serve your corn dogs warm with plenty of mustard and ketchup.

Tips

If you have extra batter, you can mix in chopped hot dogs and bake them in a mini muffin tin at 350 degrees for a quick snack. These also freeze really well if you wrap them individually and store them in a freezer bag for later.
