I love keeping this salad in my fridge for busy days when I need something satisfying but light. The combination of tender chicken and sweet garden peas creates a lovely texture, while the creamy lemon dressing ties everything together with a nice zing.

My favorite trick is to use rotisserie chicken if you are in a rush. It saves a lot of time and makes the preparation very fast.

Ingredients

  • 2 cups cooked chicken breast, shredded or cubed
  • 1 cup frozen peas, thawed
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/4 cup diced red onion
  • 1/4 cup chopped celery
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste

6Instructions

  1. 1

Place the shredded or cubed chicken into a large mixing bowl.

  2. 2

Add the thawed peas, diced red onion, and chopped celery to the chicken.

  3. 3

In a separate small bowl, whisk together the mayonnaise and lemon juice until smooth.

  4. 4

Pour the dressing over the chicken mixture and stir everything gently until well combined.

  5. 5

Season with salt and pepper to your liking and stir in the fresh parsley.

  6. 6

Serve immediately or chill in the refrigerator for at least an hour to let the flavors blend.

Tips

This salad tastes even better after resting in the fridge for a few hours. Serve it over a bed of crisp lettuce or scoop it onto a toasted croissant for a delicious meal. Keep leftovers in an airtight container for up to three days.
