There is something so special about the combination of creamy cheese and fresh fruit on a crispy piece of bread. These crostini are always a hit at my house because they look beautiful on a platter and the textures are just wonderful together.

My favorite thing about this recipe is the contrast between the sweet pears and the salty prosciutto. If you have time, lightly toast your nuts beforehand to bring out all their natural oils for even more flavor.

Ingredients

  • 1 baguette, sliced into half inch rounds
  • 1 cup fresh ricotta cheese
  • 2 ripe pears, thinly sliced
  • 4 ounces thinly sliced prosciutto
  • 1 cup fresh arugula
  • 1/4 cup pumpkin seeds
  • 1/4 cup shelled pistachios, chopped
  • 2 tablespoons honey
  • 1 teaspoon sea salt
  • 2 tablespoons olive oil

8Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Brush the baguette slices lightly with olive oil and arrange them on a baking sheet.

  3. 3

Bake the bread for about 8 minutes until it is golden and crisp.

  4. 4

In a small dry pan over medium heat, toast the pumpkin seeds and pistachios for about 3 minutes until they smell fragrant. Remove from heat and stir in a pinch of the sea salt.

  5. 5

Spread a generous tablespoon of ricotta onto each toasted baguette slice.

  6. 6

Top each slice with a piece of prosciutto, a few leaves of fresh arugula, and a slice of pear.

  7. 7

Sprinkle the nut mixture over the top of each crostini.

  8. 8

Drizzle with honey and finish with a tiny pinch of sea salt before serving.

Tips

Store any leftover nut mixture in a small airtight jar at room temperature. I suggest assembling these right before your guests arrive so the bread stays nice and crunchy.
