There is something truly magical about how blackberries transform when they hit the heat of the oven. This cobbler brings out those beautiful floral notes, making it a favorite in my kitchen whenever the berries are at their peak. It is the kind of simple dessert that feels special enough for company but easy enough for a weeknight treat.

The secret here is using almond flour for the topping instead of traditional flour. It gives the crust a wonderful texture and a light, nutty flavor that pairs perfectly with the tart fruit. I like to add a little lemon zest and a hint of cinnamon to brighten everything up, and the Greek yogurt keeps the topping perfectly tender.

Ingredients

  • 4 cups fresh blackberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1/4 cup plain Greek yogurt
  • 1 large egg

8Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit.

  2. 2

In a mixing bowl, toss the blackberries with the lemon juice, lemon zest, sugar, and half of the cinnamon.

  3. 3

Transfer the berry mixture to a greased baking dish and spread it out evenly.

  4. 4

In a separate bowl, whisk together the almond flour, baking soda, salt, and the remaining cinnamon.

  5. 5

Stir in the melted butter, Greek yogurt, and the egg until a soft dough forms.

  6. 6

Drop spoonfuls of the dough over the blackberries, spreading it slightly with the back of your spoon.

  7. 7

Bake for 30 to 35 minutes until the topping is golden brown and the berry juices are bubbling.

  8. 8

Let the cobbler cool for at least 10 minutes before serving so the filling can set.

Tips

Serve this warm with a scoop of vanilla bean ice cream or a dollop of fresh whipped cream. If you have leftovers, store them in an airtight container in the fridge for up to three days and warm them up in the oven before eating.
