There is something so satisfying about a big bowl of cabbage soup on a chilly evening. It has all the classic flavors of your favorite stuffed cabbage rolls but comes together much faster in a single pot on your stovetop.

My favorite thing about this recipe is how the rice soaks up that delicious, savory tomato broth. If you want to make it ahead of time, just keep in mind that the rice will continue to soften as it sits, so it makes for a fantastic lunch the next day.

Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 2 large carrots, sliced
  • 1 can diced tomatoes, 28 ounces
  • 6 cups beef broth
  • 1 cup long grain white rice, uncooked
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

8Instructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the Italian sausage and cook until it is browned, breaking it up into small pieces with a wooden spoon.

  3. 3

Add the diced onion and carrots to the pot and sauté for about 5 minutes until the vegetables start to soften.

  4. 4

Stir in the minced garlic and cook for another minute until it smells fragrant.

  5. 5

Pour in the diced tomatoes and the beef broth, then bring the mixture to a gentle boil.

  6. 6

Add the chopped cabbage and the uncooked rice to the pot.

  7. 7

Turn the heat down to low, cover the pot, and let it simmer for about 20 minutes or until the rice is tender and the cabbage is soft.

  8. 8

Season with dried oregano, salt, and pepper before serving warm.

Tips

Leftovers store beautifully in an airtight container in the fridge for up to 3 days. If the soup gets too thick while sitting in the fridge, simply add a splash of extra beef broth or water when you reheat it on the stove.
