There is nothing quite like a big bowl of mashed potatoes at the center of the table. They are soft, comforting, and go perfectly with everything from roasted turkey to gravy.

My favorite trick for the smoothest texture is to make sure your potatoes are completely drained before you start mashing. Adding warm butter and milk also helps them soak up all that richness much better than cold ingredients.

Ingredients

  • 5 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1 cup unsalted butter, softened
  • 1 cup whole milk or heavy cream
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped

6Instructions

  1. 1

Place the potato chunks in a large pot and cover them with cold water by about an inch.

  2. 2

Bring the water to a boil, then reduce the heat and simmer for about 20 minutes until the potatoes are fork tender.

  3. 3

Drain the water well and return the potatoes to the warm pot for a minute to let any extra moisture evaporate.

  4. 4

Use a potato masher or ricer to break down the potatoes until they are smooth.

  5. 5

Stir in the butter, milk, salt, and pepper until the potatoes are creamy and well combined.

  6. 6

Garnish with fresh chives before serving warm.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them on the stovetop with a small splash of milk to bring back that creamy consistency.
