White bolognese is one of those meals that feels fancy but is actually quite simple to make at home. By skipping the tomatoes and using a savory blend of beef, pork, and bacon, you get a deep and creamy flavor that clings beautifully to your favorite pasta.

I love serving this on chilly evenings when I want something truly satisfying. My best tip is to use freshly grated parmesan cheese rather than the pre grated kind, as it makes a huge difference in how smoothly the sauce coats the noodles.

Ingredients

  • 1 tablespoon olive oil
  • 2 strips bacon, finely chopped
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 pound pasta of your choice
  • Fresh parsley for garnish

9Instructions

  1. 1

Boil a large pot of salted water and cook your pasta according to the package directions until it is al dente.

  2. 2

While the water heats, heat the olive oil in a large pan over medium heat.

  3. 3

Add the chopped bacon to the pan and cook until it starts to crisp up.

  4. 4

Add the ground beef and pork to the pan, breaking the meat apart with a spoon until it is browned and cooked through.

  5. 5

Stir in the diced onion and garlic, then sauté until the onion is soft and translucent.

  6. 6

Pour in the white wine and let it simmer for about 2 minutes to cook off the alcohol and scrape up any flavorful bits from the bottom of the pan.

  7. 7

Lower the heat and stir in the heavy cream. Let the sauce simmer gently for 5 minutes until it thickens slightly.

  8. 8

Remove the pan from the heat and stir in the grated parmesan cheese until the sauce is creamy and combined.

  9. 9

Toss the cooked pasta directly into the sauce, top with fresh parsley, and serve immediately.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. When reheating, add a tiny splash of water or cream to bring the sauce back to its creamy consistency.
