If you love the taste of stuffed cabbage rolls but dread the work of rolling them up, this soup is for you. It captures that classic mix of savory beef, tender cabbage, and a rich tomato broth in one simple pot that does all the heavy lifting while you go about your day.

This recipe is a true life saver on busy weeknights when you want a meal that feels like a hug in a bowl. My favorite tip is to keep the rice separate until the very end, as it keeps the texture perfect and prevents the grains from soaking up too much broth and getting mushy.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 cup shredded carrots
  • 4 cups beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can diced tomatoes, undrained
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice

7Instructions

  1. 1

Heat a large skillet over medium heat and add the ground beef. Cook and crumble the meat until it is mostly browned.

  2. 2

Add the onion and garlic to the skillet with the beef and continue to cook until the onion is soft.

  3. 3

Transfer the beef mixture to your slow cooker.

  4. 4

Add the cabbage, carrots, beef broth, crushed tomatoes, diced tomatoes, brown sugar, Worcestershire sauce, Italian seasoning, salt, and pepper into the slow cooker.

  5. 5

Stir everything together until well combined.

  6. 6

Cover and cook on LOW for 6 hours or on HIGH for 3 hours.

  7. 7

Just before serving, stir in the cooked white rice and add extra salt or pepper if you prefer.

Tips

Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can also freeze the cooled soup in airtight containers for up to 3 months, just be sure to thaw it in the fridge before warming it on the stove.
