This pasta is one of my favorite comfort meals for a Sunday night. The shallots get so soft and golden in the pan, creating a rich base that tastes like you spent hours in the kitchen even though it comes together quite quickly.

I love serving this with a crisp fall salad full of apples and pears to balance out the richness of the cheese. It is a wonderful way to wind down the weekend with a warm bowl of goodness.

Ingredients

  • 12 ounces pasta of your choice
  • 4 large shallots, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup grated Gruyere cheese
  • 1/2 cup pasta cooking water
  • Salt and black pepper to taste
  • Fresh parsley for garnish

7Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to the package directions.

  2. 2

While the pasta cooks, heat the butter and olive oil in a wide skillet over medium heat.

  3. 3

Add the sliced shallots to the skillet and cook, stirring occasionally, until they are soft and golden brown.

  4. 4

Reserve half a cup of the pasta water, then drain the pasta.

  5. 5

Add the cooked pasta and the reserved water to the skillet with the shallots.

  6. 6

Toss in the grated Gruyere cheese and stir constantly until the cheese melts into a creamy sauce.

  7. 7

Season with salt and pepper, garnish with fresh parsley, and serve immediately.

Tips

Store any leftovers in an airtight container in the fridge for up to two days. When reheating, add a tiny splash of water to the pan to bring the cheese sauce back to life.
