When the days get shorter and the temperature drops, nothing beats a warm casserole waiting in the oven. This dish is a real favorite in my house because it is hearty and satisfying after a long day.

You can easily prepare this ahead of time and keep it in the fridge until you are ready to bake. If you want the topping extra golden, try adding a little extra sprinkle of cheese during the final five minutes of cooking.

Ingredients

  • 2 tablespoons butter
  • 1 onion, finely diced
  • 2 large chicken breasts, cut into bite sized pieces
  • 2 cups sliced mushrooms
  • 2 carrots, chopped
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese

9Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

Melt the butter in a large skillet over medium heat and add the onion, cooking until soft.

  3. 3

Add the chicken pieces to the skillet and cook until browned on all sides.

  4. 4

Stir in the mushrooms and carrots, cooking for another five minutes.

  5. 5

Sprinkle the flour over the mixture and stir well for one minute.

  6. 6

Slowly pour in the chicken broth and cream while stirring constantly until the sauce thickens.

  7. 7

Remove from heat, stir in the peas and thyme, and season with salt and pepper.

  8. 8

Pour the mixture into a baking dish and top with the shredded cheese.

  9. 9

Bake for 20 to 25 minutes until the cheese is bubbly and slightly browned.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. This casserole pairs beautifully with a simple side salad or some crusty bread to soak up the creamy sauce.
