There is something so special about a bowl of warm beef and noodles when the weather starts to turn chilly. It is one of those classic meals that feels like a big hug, and it is budget friendly enough to feed the whole family on a busy weeknight.

This version uses a chuck roast that gets nice and tender after a long, slow simmer. By the time you stir in the egg noodles, the broth has all the deep, savory flavor you could ever want in a comfort food dish.

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 12 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped

8Instructions

  1. 1

Cut the beef chuck roast into large chunks and season them well with salt and pepper.

  2. 2

Heat the olive oil in a large pot over medium high heat and brown the beef on all sides.

  3. 3

Add the chopped onion and garlic to the pot, cooking until they soften and smell fragrant.

  4. 4

Pour in the beef broth and water, then add the thyme.

  5. 5

Bring the liquid to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 2 hours until the beef is very tender.

  6. 6

Remove the beef chunks and shred them with two forks, then return the shredded meat back into the pot.

  7. 7

Add the egg noodles to the simmering broth and cook according to the package directions until they are tender.

  8. 8

Taste and adjust the salt and pepper if needed, then stir in the fresh parsley before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. The noodles will soak up the broth over time, so you might want to add a splash of water or extra broth when you reheat it on the stove.
