Herb Butter Roasted Turkey Breast
This juicy turkey breast is rubbed with a savory garlic herb butter and roasted until the skin is perfectly golden and crisp.
enzo81.xyzThis is my favorite way to make a holiday main dish when I want to keep things simple. It smells amazing while it cooks and the meat stays so moist thanks to that herb butter rub under the skin.
A little tip for the best skin is to make sure the turkey is very dry before you start. Use paper towels to pat it down everywhere, including the little nooks, so the butter sticks perfectly and helps the skin brown evenly.
Ingredients
- 1 turkey breast with the bone, about 6 to 7 pounds
- 1/2 cup unsalted butter, softened
- 3 cloves garlic, minced
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, roughly chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
8Instructions
- 1
Preheat your oven to 325 degrees Fahrenheit and place the chopped onion, carrots, and celery in the bottom of a roasting pan.
- 2
Pat the turkey breast completely dry with paper towels to ensure the skin gets nice and crispy in the oven.
- 3
In a small bowl, mix the softened butter with the garlic, sage, thyme, rosemary, lemon zest, mustard, smoked paprika, salt, and pepper.
- 4
Gently loosen the skin over the turkey breast with your fingers and spread about half of the herb butter directly onto the meat under the skin.
- 5
Rub the remaining butter mixture all over the outside of the skin so every part is covered.
- 6
Place the turkey on top of the bed of vegetables in your roasting pan.
- 7
Roast the turkey until a meat thermometer reaches 165 degrees Fahrenheit in the thickest part, which usually takes about 20 minutes for every pound of meat.
- 8
Remove the turkey from the oven and let it rest on a cutting board for at least 15 to 20 minutes before you start carving.
Tips
Store any leftovers in an airtight container in the fridge for up to four days. You can use the drippings left in the pan to make a quick gravy by whisking them with a little flour and chicken stock on the stovetop.
