This Greek chicken soup is one of my favorite things to make when I need something cozy. It uses a traditional method of tempering eggs with lemon juice to create a rich, silky broth without needing heavy cream. It is such a refreshing change from your standard chicken noodle soup.

My top tip is to make sure your chicken broth is warm before you temper the egg mixture. If you add the eggs too quickly to boiling liquid, they might scramble. Take your time whisking, and you will get a perfect, smooth soup every single time.

Ingredients

  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups shredded cooked chicken
  • 3 large eggs
  • 1/3 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish

7Instructions

  1. 1

Bring the chicken broth to a boil in a large pot over medium heat.

  2. 2

Add the orzo to the boiling broth and cook for about 8 to 10 minutes until tender.

  3. 3

Stir in the shredded chicken and let it heat through for a minute, then remove the pot from the heat.

  4. 4

In a separate bowl, whisk the eggs and lemon juice together until well combined.

  5. 5

Slowly pour about a cup of the hot broth into the egg mixture while whisking constantly to keep the eggs from scrambling.

  6. 6

Gradually pour the tempered egg mixture back into the main pot of soup while stirring constantly.

  7. 7

Season with salt and pepper to taste, then serve immediately with a sprinkle of fresh parsley.

Tips

Serve this soup with a side of crusty bread to soak up the creamy broth. If you have leftovers, keep them in the fridge for up to three days, but keep in mind that the orzo will soak up the liquid as it sits. You can add a splash of extra broth when reheating.
